Welcome to Table for One, a newsletter exploring the art of eating alone.

Before we crack on with the meal plan, I just wanted to say thank you (again) because One Pot One Portion is a SUNDAY TIMES BESTSELLER! Truly truly a dream come true, and I couldn’t believe it when I heard the news this week. It’s number 5 in manuals, and number 6 in all hardback non fiction. Unbelievable. I’m eternally grateful. If you’ve bought the book and love it, maybe you could recommend it to a friend. It’s currently only £16 on Amazon, and £12 in Sainsburys (second round of big news, the book is available in sainsburys!!).

Now onto the food!

I don’t want to jinx it, but did anyone see *whispers* the sun this week?! Unsure where that came from, but it has inspired a meal plan based mainly on recipes from the Fresh & Simple chapters of my cookbook. No need to turn the oven on for any of these recipes, they’re simple stove-top dinners packed with fresh herbs, and seasonal flavours!

We’ve got my herby chicken & rice salad, which is probably the recipe I have made most out of all of them- it’s a staple for me! Plus, my gnocchi con tomate which should be illegal, it is so simple, but my goodness the taste is phenomenal. Make sure you buy good quality tomatoes though. They’re essential.
