Welcome back to Table for One, the newsletter all about the joy of solo dining. This is a meal plan edition of the newsletter, however I’ve also started sharing weekly roundups! I’ll recap the recipes I’ve developed over the last couple of weeks but I also want to talk about some non-food things. This week I talked about intentionally slowing down, and the therapeutic process of cooking, plus a sneak peak at my new youtube series! This week I’m sharing Meal Plan 15, where I take 5 one pot one portion recipes that use similar ingredients and make a weekly meal plan for you. The aim is to make your life that little bit easier, because doing things by and for yourself can feel like a lot sometimes! I include your shopping list (categorised) plus recipe notes, ingredient swaps and tips and tricks for using up leftovers.

So what’s on the menu this week…

Well you’ll know by now that I think self-love is a year-round concept, but February is a nice little reminder to show yourself the extra love that you might be considering showing someone else (show them too, of course, but don’t forget about yourself). With that in mind I’m still sharing easy weeknight meals, but ones that feel a little extra special, because why the heck not!

I’ve also included dietary swaps to give you ideas for how to make the recipes in this meal plan gluten-free, vegetarian or vegan!

The aim of this newsletter is to ensure you’re getting maximum variety in your food, without the stress or hassle of a million pots and pans, or endless leftovers taking over your fridge. Please note that you do need my cookbook in order to use these meal plans as lots of the recipes are from the book!
