Welcome back to Table for One! This is Meal Plan 13, where I take 5 one pot one portion recipes that use similar ingredients and make a weekly meal plan for you. The aim is to make your life that little bit easier, because doing things by and for yourself can feel like a lot sometimes! I include your shopping list (categorised) plus recipe notes, ingredient swaps and tips and tricks for using up leftovers.
It is the new year (but really it’s too late now to wish you a HNY, so I won’t…but know that I do wish it for you), and before I get into the meal plan this is just a little note to say that there’s a lot of food noise around this time of year and it can be hard to block out, but if I can contribute one thing to this noise it’s that you do not need to cut out, restrict or radically change anything about yourself. You’re great. And a little bit of self-love goes a long way. So while there will be many many new recipes from me this year, there will be no drastic changes to my message. Though some recipes may have more fibre or more protein, there will never be talk of calories, macros or ‘health’ because that is completely and entirely personal. What’s healthy for me may not be what’s healthy for you, and as such there is no one meal that can be considered healthy, in my opinion.
So essentially what I want to say is this is still solely a page, a newsletter, a meal plan for people who love good food and want to show themselves a little love.
So what’s on the menu this week…
Well, it’s a real array of flavours. Some fresh and zingy, some cosy and comforting. I’m also giving you exclusive early access to a couple of recipes that I haven’t shared yet including this Smashed Chicken Bánh Mì Flatbread (long name I know) which you can find at the bottom of the meal plan.

I’ve also included dietary swaps to give you ideas for how to make the recipes in this meal plan gluten-free, vegetarian or vegan!
The aim of this newsletter is to ensure you’re getting maximum variety in your food, without the stress or hassle of a million pots and pans, or endless leftovers taking over your fridge. Please note that you do need my cookbook in order to use these meal plans as lots of the recipes are from the book!
